Originating in Tamil Nadu, India, kai murukku is a popular South Indian snack or savory fried food item. The main ingredients of the hand murukku are urad dal, or black gram lentils, and rice flour. To make a stiff dough, these two main ingredients are combined with water, salt, and spices.
The dough is also known as kai suthu murukku or suthu murukku because it is well-kneaded and then extruded into elaborate and intricate patterns. The dough gets its distinct look by being extruded normally in the form of a spiral or coil. The flavor of Kai Murukku is slightly spicy and contains a tinge of black gram lentils.
The texture of the food is renowned for being brittle and crispy. Rolling the dough thinly and evenly is key to getting even cooking and crispy results. Usually given as a snack with hot tea or coffee is kai murukku.
